Chocolate quente maia (Mayan hot chocolate)




Chocolate quente é sempre uma boa pedida nesse friozinho. Esta receita é a o do filme 'Chocolate'. Sempre quis fazê-la, dele desfrutar como a velha Renée; entre o proibido e o prazer, uma gota de puro chocolate escorrendo aos lábios. Adoro a cena em que ela de repente começa a rir como se as especiarias invadissem sem corpo velho, cansado e diabético fazendo-a sentir-se garota novamente. Chocolate maia, para você!

Hot chocolate is always the perfect choice in cold weather. This recipe is from the movie 'Chocolate'. One of my dreams as a chef always was to drink this like the old Renée. Just love that scene when she sudden starts to laugh like the spices are invading her old tired diabetic body to make her feel like a girl again.

Ingredientes (Ingredients)

1 L de leite integral + ½ copo para a espuma
1 fava de baunilha - pode substituir por extrato ou essência
Raspas de uma laranja - a laranja torna este chocolate ainda mais complexo e mágico
200ml de creme de leite fresco - não deixe de fazer se não o tiver! Bata o leite em espuma.
2 col. sopa cheia de cacau em pó - pode substituir por Chocolate do Padre
1 col. sopa rasa de açúcar refinado - lembre-se que o chocolate e o licor já são doces
2 col. sopa rasa de amido de milho - queremos película atrás da colher, crème anglaise
100g de chocolate ao leite Nestlé - Hersheys cumpre o prometido
50g de chocolate Callebaut amargo 70% - este é para um toque de glamour
¼ col. café canela em pó + para decoração - se puder moer a sua, faça!
1 canela em pau - a mistura da canela em pau com a em pó ressalta a especiaria
¼ col. café cravo em pó - use com cautela ou ele amarga o chocolate todo
¼ col. café de cardamomo em pó - moa grãos num pilão para um sabor diferenciado
¼ col. café de aniz em pó - a moagem do aniz também resulta em sabor mais forte
1 pitada de noz moscada - seja sutil! Se em exagero, ela cobre todos os outros sabores
1 pitada de pimenta calabreza - são 2 ou 3 grãozinhos, a menos que esteja muito frio
80ml de licor de cacau - pode substituir por Brandy, Rum Montilla, Cointreau

1 Liter whole Milk plus ½ cup to milk froth
One vanilla bean - you can substitute by extract or essence
Zest of one orange - this ingredient gives a citric hint to your chocolate
200ml fresh cream - to put on top of chocolate
2 tbsp (full) cocoa powder
1 tbsp refined sugar - remember chocolate and liqueur are already sweetened
2 tbsp corn starch - a thin layer on the back side of the spoon, such as english cream
100g (0,22lb) (3,5 oz) milk chocolate - Hersheys work just fine
50g (0,11lb) (1,76 oz) Belgian bitter chocolate, 70% cacao
¼ tsp groung cinnamon plus more for garnish
1 cinnamon stick - when you mix the stick with powder flavors are enhanced
¼ tsp ground clove - avoid using too mush, causes bitterness
¼ tsp ground cardamom
1 pinch of ground nutmeg
1 pinch of red pepper flakes – I put 2 or 3 grains, no more, please!
80ml cacao liqueur – substitute by Brandy, Run, Cointreau


Utensílios: panela, colher de silicone, fouet ou batedor, peneira, faca, tábua, mixer
Utensils: médium pan, silicon spoon, fouet or whisk, colander, knife, board, mixer



Modo de fazer (Method)


1 - Coloque o leite na panela com o açúcar. Enquanto esquenta, abra a fava de baunilha e despeje as sementes no leite junto da baga. Se você não tiver a baunilha em fava, adicione a essência somente ao término da cocção. Adicione então todas as especiarias. Não ponha nem o chocolate nem o licor. Ligue o fogo e, assim que a mistura começar a ferver, desligue e tampe. Aguarde 30 min.

Put milk and sugar on low heat in pan. While heating, scrap vanilla seeds into the pan together with the pod. In case you don’t have vanilla beans, you can use extract or essence; but after turning off heat. Add all spices. Don’t add chocolate nor the liqueur. When milk starts simmering, turn off heat, put a lid n pan and wait 30min.


2 - Passe a mistura por uma coador e volte à panela. Dissolva a maisena com um pouco de leite e volte a mistura à panela. Adicione o cacau em pó e ligue o fogo novamente.

The next step ir to strain milk through a colander and put it back into the pan. Dissolve corn starch with a bit of water and whisk it with milk together with cocoa powder. Turn on heat again.


3 - A mistura vai espessar sutilmente, ainda cai em fio da colher. Desligue o fogo e acrescente os chocolates. Por fim, adicione a bebida alcoólica de sua preferência. Os americanos têm o costume de adicionar 50ml de creme de leite fresco ou uma colher de sopa rasa de manteiga para brilho. Acho completamente desnecessário.

Mixture will thicken in about 10min. Turn off heat and add chopped chocolates. After that, add liqueur (and vanilla extract, if is your case). Americans are used to add some cream or unsalted butter to a shiny result, which I consider unnecessary.

4 - Para fazer a espuma de leite, você precisa de um mixer ou milk frother (um mixer portátil...eles são pequenos com um arame no fim do batedor). Lembra daquele ½ copo de leite reservado? Esquente no micro ou numa panelinha menor. Se usar o mixer grande, bata o leite com o fogo ligado. Se for usar o mixer portátil, bata o leite dentro do próprio copo onde esquentou no micro.

Now, in order to make milk foam, you’ll nedd a frother or hand mixer. Remember that half cup of milk? Heat that on microwave and try frothing. You can also heat milk on stove and froth it while still boiling for better results.

6 - Agora basta bater o creme de leite e montar. Encha metade da taça com o chocolate quente. Com auxílio de uma colher, retire a espuma de leite e sobre ela, coloque o chantilly fresco. Salpique canela ou cacau em pó e sirva imediatamente. Acompanha biscoitos amanteigados, tea cakes ou shortbreads.

All you have to do now is chantilly. To assemble, fill half cup with hot chocolate. Using a spoon, get the milk foam and then add some Chantilly. To finish, dust some ground cinnamon or cocoa powder and serve immediately. Better with butter cookies, tea cakes or shortbreads.
