Rocambole de uva (Grape jam roll cake)






 
Olá! Se você gosta de rocambole, hoje tenho uma receita muito fácil e de ótimo resultado. Você pode fazer a massa no liquidificador. Assa rapidamente, além do excelente resultado, consistência e sabor. Massa fininha e delicada!



 


Hey there! If you like swiss cake or roll cake, this recipe will come in hand. Imagine doing the batter not with a mixer but on the blender! This one bakes quickly, has strenth and flexibility. Sure you'll like it!


Ingredientes (Ingredients)

3 ovos grandes
1 xic. de açúcar refinado
3 col sopa de manteiga ou margarina + manteiga para untar
1 xíc. de farinha
1 col. sopa de fermento em pó
Chantilly Hulalá
Geléia de fruta fresca - uva, laranja, morango, framboesa, amora
1 col. sopa gelatina em pó sem sabor

3 large eggs
1 cup refined sugar
3 tbsp butter or margarine plus to baking pan
1 cup wheat flour
1tbsp baking powder
Cream - use fresh cream only for parties, if the cake is gonna be eaten soon
Fresh fruit jam - prefer fresh homemade jelly
Unflavoured gelatin powder - for garnishment when mixing jam and chantilly.



Modo de fazer (Method)


1 - Pré aqueça o forno em 180°C. Unte uma forma própria para rocambole (40 x 30) com manteiga e coloque um papel manteiga. Estou utilizando a forma da Caparroz, à venda na Chocolândia.

Pre heat the oven to 365F. Butter and put some parchment paper into a 16 x 12in aluminium pan.


2 - Bata os ovos, o açúcar e a manteiga (ou margarina) no liquidificador). Acrescente a farinha e o fermento e use o pulsar.

In the blender, beat the eggs, sugar and butter together. Then add flour and baking powder with pulsar.


3 - A massa estará pronta assim que formar bolhas, toque com a mão para verificar se parece uma esponja. Não deixe dourar!

Cake will be ready when you see bubbles coming up the surface. Do not let it golden!


4 - Vire a massa sobre um pano úmido. Não há necessidade de usar açúcar. Se for cobrir o rocambole com chantilly, pode enrolá-lo do jeito que está. Caso contrário, se for jogar açúcar de confeiteiro, o ideal é que a parte mais clarinha do bolo (a que ficou no fundo da forma) fique do lado de fora do rocambole; ou seja você tem que virar a massa do outro lado antes de enrolar. Use 2 panos e aja com rapidez!

Now, drop the cake into a cloth. There’s no need to use sugar; however, cloth shall be wet. If you’re going to decorate you roll cake with some chantilly, do it in that position, with the darken side outside the cake. On the other side, if you’re going to sprinkle some confectioner sugar, then the light side should stay on top, so you have to turn the cake upside down with another cloth.


5 - Com a massa pronta, passe a geléia de sua preferência e, depois, uma farta camada de chantilly. Prefira Hulalá pois a validade do doce será melhor. Você também pode rechear com ganache, creme patisserier e até mesmo frutas picadas com chantilly. Tudo depende da sua freguesia e do quão rápido o produto será consumido.

Now the cake is ready and you can fill it with some fresh jam. I prefer to combine jam and chantilly ‘cause jam itself can be too sweet. In that case, use industrial cream, the ones we use to decorate cakes. Nowadays, we can find a lot of brands, flavour is great and your cake will be fresh till the next day, not the same with fresh cream. Remember to live at least 1 in on all sides, so that the filling will not escape when rolling cake.


6 - Certo! Agora a parte mais difícil. Use o pano para te auxiliar a enrolar o rocambole. Não aperte e também não empurre o pano, achando que o rolo vai virar sozinho e ficar perfeito, apertadinho. Não vai! Vc tem que ser ágil e usar a pressão correta, como um sushi. Ao final, uma régua ajuda a apertar ainda mais, se for o caso.

Ok! Now what i consider the most troubling part. Use the cloth to roll the cake. The first part is much like a sushi. Then push the cloth over the cake, very slowly and gently, pressing the cake with both hands. When it’s rolled immediately transfer to the serving plate to garnishments.


7 - Transfira o rocambole para uma travessa ou base de papel e decore a gosto. Como misturei a própria geléia ao chantilly, este perdeu consistência. Adicionei então a gelatina dissolvida em água quente e levei o chantilly ao freezer. Bati com um fouet e já estava pronto para decorar o rocambole com o bico. Esta é uma forma muito legal de decoração caso você, assim como eu, tenha familiares com alergia aguda a químicos e corantes.

In this case, a covered the cake with thin layer of white Chantilly. Then I decided to use the star tip and decorate. Once you mix jam with Chantilly, cream will loose consistence. Add some gelatin and keep on going!




Para terminar, decorei com amarenas e joguei um pouco de sua calda sobre o rocambole.
