Torta pudim de chocolate (Double Chocolate Pudding Pie)





Vc já se imaginou comendo uma torta de chocolate em barra e ainda por cima light? Pois foi exatamente a sugestão de Ellie Krieger, apresentadora do programa 'Apetite Saudável'. O que mais me chamou a atenção nesta receita é que o recheio começa na panela como um creme enriquecido de maizena e depois ainda leva gelatina. Nunca vi maisena e gelatina juntos. Será que fica bom? A receita tem a recomendação de mais de 50 pessoas.

Have you ever imagined eating chocolate torte made with real chocolate, healthy and light? That's exactly what suggested Ellie Krieger, host of the Tv Show 'Healthy Appetite'. In fact, what most called my attention is the mixture between gelatin and cornstarch. Is it a good thing? Well, the recipe is recomended by 50 people on Food Network.



Ingredientes (Ingredients)

1 pacote de rosquinhas de leite – vc vai usar entre 250 a 300g
2 col. chá de manteiga sem sal – derretida no micro
1 col. sopa de água
1 col. sopa de gelatina em pó sem sabor
1/3 xíc. de água fervente - para dissolver a gelatina
2/3 xíc. de açúcar refinado + ½ col de chá
1/3 xíc. de cacau em pó - pode substituir por Chocolate do Padre1/4
1/4 xíc. de maisena
1 pitada generosa de sal
3 xíc. de leite
60g de chocolate meio amargo - picado
2 col. chá de extrato de baunilha
1/4 xic. de creme de leite fresco - se você encontrar nata é ainda melhor

14 graham cracker squares (7 full sheets)
2 tablespoons butter, melted
1 tablespoon water
1 tablespoon unflavored gelatin
1/3 cup boiling water
2/3 cup sugar, plus 1/2 teaspoon
1/3 cup cocoa
1/4 cup cornstarch
1/8 teaspoon salt
3 cups 1 percent low-fat milk
2 ounces bittersweet chocolate, chopped
2 teaspoons vanilla extract
1/4 cup heavy cream




Modo de fazer (Method)


 
1 - Pré aqueça o forno me 180ºC. Unte uma forma de 25cm de diâmetro, com fundo removível, com manteiga ou óleo.

Preheat the oven to 350 degrees F. Spray a 9-inch pie plate with cooking spray.


2 - Num processador de alimentos ou num saco com seu martelo de carne, quebre as bolachinhas até virarem pó. Adicione a manteiga e a colher de sopa de água para dar liga. Pressione essa massa na forma, tomando o cuidado de deixar também de 2 a 3cm de altura nas laterais. Vamos assá-la por 10 minutos e deixá-la esfriar completamente.

In a food processor, process the graham crackers until finely ground. Add butter and water and process until the crumbs clump together. Press the crumb mixture into bottom of pie plate and about 1-inch up the sides. Bake for 10 minutes, then let cool.


3 - Enquanto isso, vamos fazer o pudim para o recheio da torta. Lembra da água fervente? Vamos jogar a gelatina nessa água e deixar dissolver bem. Reserve.

In the meantime, make the pudding. Put the gelatin in a small bowl, add the boiling water and stir until dissolved. Set aside.


4 - Agora, numa panela pequena, coloque o açúcar, o chocolate em pó, o amido e o sal. Gradualmente, adicione a metade do leite e mexa até que fique homogêneo. Adicione então o resto do leite e ligue o fogo no médio. Leva cerca de 10 minutos até a mistura ferver e engrossar. Não pare de mexer!

In a medium saucean mix the 2/3 cup of sugar, cocoa, cornstarch and salt. Gradually add half of the milk, whisking until smooth. Whisk in the rest of the milk. Turn the heat on to medium and cook, whisking constantly, until the mixture thickens and comes to a boil, about 10 minutes.

 
5 - Desligue o fogo. Adicione o chocolate picado e mexa até dissolver tudo. Adicione a baunilha e a gelatina dissolvida em água. Coloque a mistura na crosta já fria de massa e deixe na geladeira por 3 horas

Remove from the heat. Add the chocolate and stir until melted. Stir in the vanilla and reserved gelatin. Pour the mixture into the pie crust and let set for 3 hours in the refrigerator.

 
6 - A 1/2 col. de chá de açúcar, você usa para bater com o creme de leite fresco, fazer chantilly e servir junto com a torta.

Whip the cream and remaining 1/2 teaspoon of sugar. Before serving, garnish the pie with the whipped cream.

Torta de frutas do 'Minimalista' ('The Minimalist' fruit pie)

Esta receita é do programa 'The Minimalist' (O Minimalista). Fiz uma modificação na massa e agora ela é ainda mais fácil, rápida, saborosíssima e dura muito bem na geladeira. Outra vantagem é que você pode abrir a massa como bem quiser, deixando-a ainda mais artesanal. Faça com maçãs e blueberries, pêras e chocolate, pêssegos e cerejas. Use baunilha, raspinha de limão, mas nunca se esqueça do suco de limão. Ele dá o toque final. Encontrei nata no supermercado do Shopping Frei Caneca, R$ 3,50 por 350g, de excelente qualidade e acompanha muito bem a torta gelada. Você adiciona baunilha, raspinha, algum licor e vai para a felicidade! rs

Got his recipe from The Minimalist, made some changes on the dough and now I think it got even easier and tasteful. The best part is that it lasts very well on the fridge without loosing its crunchiness. Another advantage is that you can open the dough as you wish, with your hands for instance. Don't believe me? Take a look down here! Try it out with apples and blueberries, pears and chocolate, peach and cherries. Use vanilla pods, lemon zest but never forget the lemon juice, surely gives a final touch.




Ingredientes (Ingredients)

6 maçãs verdes - escolha a Granny Smith. Estava R$ 5,00 o Kg quando comprei
300g de açúcar
Raspa e suco de 2 limões
100g de blueberries - a Net Feira faz delivery, acho que está uns R$ 15,00 a caixa.
120g de manteiga
180g (1 xíc. e 1/2) de farinha de trigo
Canela em pó (opcional)
1 ovo  para a massa - vamos usar só a gema
1 ovo para pincelar

6 green apples - prefer 'Granny Smith'
300g (0,66lb) (10oz) of sugar
Zest and juice of 2 lemons - prefer sicilian
100g (0,22lb) (3,5oz) of blueberries
100g (0,22lb) (3,5oz) of unsalted butter
0,44lb (7oz) flour - no need to use self raising, ok?
Fresh ground cinnamon
1 egg yolk to the dough
1 egg to the egg wash





Modo de fazer (Method)


1 - Vamos começar com as maçãs. Descasque-as e retire o coração. Então corte em 16 partes. Gosto de usar aquele utensílio da Tramontina com dentinhos. Lembre-se de esperemer metade de um dos limões aqui com um pouco de água e vá mexendo as maçãs na tigela para receberem o suco. Isso evitará que escureçam.

First, peel and take the heart of all the apples. Now cut them into 16 pieces. Squeeze half of a lemon mixed with some water to avoid them to get darkened. Once they're ready, put the apples in the pan you're going to bake the pie.


2 - Assim que as maçãs estiverem prontas, salpique sobre elas 250g de açúcar, a raspinha dos 2 limões e o suco. Prove e veja se estão muito doces pelo açúcar ou se azedinhas com o limão, como achar melhor. Coloque agora 100g de farinha, vai ajudar a formar o creme junto da pectina. Mexa com as mãos para envolvê-las.

Sprinkle half of the sugar over them, the lemon zest and the remaining juice. Taste and decide if it needs more sugar or if it's too sweety in need of more lemon juice. Once it's equilibrated, you can add half of the flour. That'll garantee to form a creamy filling together with the apple pectin. Toss it with both hands, evolving all fruit pieces.

3 - Leve as maçãs ao forno a 200ºC para cozinharem e ganharem cor. Gosto de fazer isto para as maçãs cozinharem. Igual à Tarte Tatin, se levarmos as maçãs direto ao forno com a massa, a crosta irá dourar e as maçãs não ficarão cozidas como queremos. Entendeu agora?

Now take the apples to the oven at 392°F. This procedure is similar to the Tarte Tatin recipe, we want the apples to cook, not the dough to bake while the apples are still on forktender consistence. The only thing is, you can't add the blueberries right now unless you wann'it to form a velvet juice. I prefer to add just before covering with the dough. That's up to you!


4 - Você deve estar se perguntando, mas e as blueberries? Ora, se as colocarmos nesta fase, vão estourar facilmente. E nós queremos conservá-las. Vamos lá, enquanto suas maçãs cozinham, você pode ir fazendo a massa podre.

So, i prefer to add the blueberries after the fruits are cooking for 30min. During that time, you can make your dough.

5 - Massa podre é muito de olho. Lembre-se, você deve sempre pôr manteiga suficiente para a massa ficar gelada e pegajosa, mas não deixe desmantelar entre os dedos. O açúcar pode ir misturado com o ovo + um chorinho de água. A textura é a seguinte, não esqueça mais: gelada, cor amarelo clara, querendo esfarelar, você sente os graozinhos de açúcar entre os dedos. Se ficar seca, não complete com água! Molhe apenas as mãos e vá sovando até juntar tudo e ficar homogênea. Se voce apertar, ela ainda racha, mas é sutil. Deixe gelar um pouquinho, coisa de 5 a 8min no freezer. Você ouviu bem, esse tempo não é suficiente para criar crosta na massa, ok?

You see, a butter flaky dough is too much of each ones' eye. The recipe is as it follows: sugar, 1 egg yolk, butter, flour and a pinch of salt. First, beat the egg yolk with the sugar. Always remember to add cold unsalted butter into the flour and mixture with the finger tips, avoiding hand heat. In this stage, the consistence much similar to sand and the colour is a pale yellow. Adding even more butter will let your dough deliciously moist however not too crispy. Once you did that, just add the egg with sugar and salt. Now, if you reached perfect and smooth consistency, like not sticking in your hands, great! If you didn't, don't add water directly to the dough; wet your hands and work it a little more. So, secret is to find the perfect balance between flour and butter and you can always add some more flour if the dough is too much greasy and yellow, specially if you want to use a rolling pin and cut stripes. Now, if you prefer a greasy crust, don't get disappointed, you can always use a plastic foil. The final result must be: if you press, there'll be little fissures. Even though, you have elasticity to work.

6 - Agora o pulo do gato. Você pensou que teria de abrir em rolo de massa, colocar entre dois plásticos, nada disso! Faça bolinhas e com as mãos vá abrindo em panquequinhas. Jogue-as sobre a torta. É artesanal e divertidíssimo. Não se importe se ficarem buracos, a idéia é essa mesmo. Vc vai adorar o resultado. Pincele com o egg wash (1 ovo + um chorinho de água)

By this time, your fruits must already be cooked. Now what a consider the most fun part. You thought the only way we could stretch the dough was using a rolling pin. Not at all! In this recipe you can really go mad, like molding litte dough balls and transforming them into pancakes. Yeah, just add them over the fruits like making your own pattern. Add the eggwash (beat one egg with very little water) and...

7 - Leve sua torta ao forno, temperatura de 180ºC até dourar. Para  mim, levou uns 40min ou mais. A massa, como fica em contato com as frutas, lava mais tempo para cozinhar. Primeiro, ela embranquece, depois ela começa a dourar para então dar uma leve crocância.

Now, bake your pie at 356ºF till it's gold and brown. I took about 40min or maybe more 'cause the dough gets humid when in contact with the fruit juice. First it gets lighter and then starts to darken and getting crispy.

8 - A torta estará prontinha quando vc bater na massa com uma colher e fizer um ruído oco. Retire do forno e sirva. Você pode comer quente com sorvete ,ou melhor, pode comer gelada, com nata. É isso aí, até o dia seguinte, ela ainda está crocante.

Your pie will be ready when you hit the dough and hear kinda a wood sound. So you can serve it hot with vanilla ice cream or you can eat cold with heavy cream.

Quadrados de abacaxi com limão (Lemon pineapple squares)

Ingredientes (Ingredients)



Crosta (Crust)

1 ½ xic. de farinha
½ xíc. de coco fresco ralado no médio
1 xíc. de açúcar de confeiteiro
¼ col. chá de sal refinado
½ xic. de manteiga sem sal

1 1/2 cups all-purpose flour
1/2 cup unsweetened coconut, medium shred
1 cup icing sugar, sifted
1/4 teaspoon fine salt
1/2 cup cold unsalted butter



Recheio (Filling)


230g de cream cheese - 1 ½ pacote, em temperature ambiente
2 xíc. de açúcar refinado
¼ xic. de farinha
3 ovos grandes
1 col. sopa de raspas de limão
½ xíc. de suco de limão
½ xic. de abacaxi – pulse no liquidificador e coe ou pique bem pequeno
Açúcar de confeiteiro para decorar

1x8 ounce pkg cream cheese, room temperature
2 cups sugar
1/4 cup all-purpose flour
3 large eggs
1/2 cup lemon juice
1 tablespoon finely grated lemon zest
1/2 cup drained, crushed pineapple
icing sugar, for dusting




Modo de fazer (Method)


1 - Vamos primeiro pré aquecer o forno a 180ºC. Unte com manteiga uma forma quadrada de 25cm de lado ou retangular de 30 x 20cm. Forre com papel manteiga de modo que ele pegue também os lados da forma.

For crust, preheat oven to 350 °F. Grease and line a 9-inch square pan with parchment paper so that it hangs over the sides.


2 - Para a base, pulse os ingredients em seu processador até chegar a uma textura seca e em pedaços. Pressione essa mistura na forma e leve ao forno por 12 minutos até que comece a dourar dos lados bem sutilmente. Retire e deixe esfriar.

Pulse all ingredients together until a rough, crumbly texture (mixture will be dry). Press into prepared pan and bake 12 minutes, until it just starts to brown around the edges. Allow to cool.


3 - Para o recheio, reduza a temperatura do forno a 160ºC. Pegue sua batedeira e coloque o batedor chato. Bata o cream cheese até que fique macio, vá adicionando o açúcar refinado aos poucos e em velocidade baixa. Adicione os ovos um a um, batendo entre cada um deles. Misture o suco de limão e as raspinhas. Desligue a batedeira.

For filling, reduce oven temperature to 325 °F. Beat cream cheese to smooth and add sugar and flour while beating. Add eggs, one at a time, beating well after each addition. Mix in lemon juice and zest. Turn off your mixer.

4 - Adicione o abacaxi à mão e coloque essa mistura sobre a crosta assada. Leve então ao forno por mais 20 a 25 minutos até que fique consistente ao toque. Não deixe dourar ou ficará seco demais. Deixe esfriar por 1 h para então cortar e salpicar o açúcar de confeiteiro.

Stir in pineapple. Pour over cooled crust and bake for 20 to 25 minutes, until set but not browned. Cool for an hour, then chill completely before dusting with icing sugar and slicing.





Rendimento: 16 unidades

Frango romano (Roman-style chicken)



Receita da Giada de Laurentis, simples e saborosa como toda receita italiana deve ser.

Ingredientes (Ingredients)

4 metades de peito de frango, sem pele mas com as costelas
2 coxas de frango sem pele, mas com os ossos
½ col. chá de sal + 1 col. chá
½ col. chá de pimenta preta em grão fresca moída + 1 col. chá
¼ xíc. de azeite de oliva
1 pimentão vermelho, fatiado
100g de prosciutto, picado
2 dentes de alho, picados
1 lata de tomates pelatti
½ xíc. de vinho branco
1 col. sopa de folhas de tomilho frescas - orégano fresco de feira NÃO é tomilho, ok?
1 col. chá de folhas de orégano frescas
½ xic. de fundo de frango - congele carcaças e guarde a água do cozimento
2 col. sopa de alcaparras - deixe de molho em água
¼ de xic. de folhas de coentro frescas picadas

4 skinless chicken breast halves, with ribs
2 skinless chicken thighs, with bones
1/2 teaspoon salt, plus 1 teaspoon
1/2 teaspoon freshly ground black pepper, plus 1 teaspoon
1/4 cup olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 ounces prosciutto, chopped
2 cloves garlic, chopped
1 (15-ounce) can diced tomatoes
1/2 cup white wine
1 tablespoon fresh thyme leaves
1 teaspoon fresh oregano leaves
1/2 cup chicken stock
2 tablespoons capers
1/4 cup chopped fresh flat-leaf parsley leaves



Modo de fazer (Method)


1 - Primeiro vamos temperar o frango com a ½ col. de chá de sal e a ½ col. de chá de pimenta. Numa frigideira grande e pesada, vamos aquecer o azeite de oliva em fogo médio. Quando o óleo estiver quente, vamos selar o frango até que fique dourado de ambos os lados. Retire da frigideira e reserve em local fechado hermeticamente, tipo um taperware.

Season the chicken with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a heavy, large skillet, heat the olive oil over medium heat. When the oil is hot, cook the chicken until browned on both sides. Remove from the pan and set aside.


2 - Não lave a frigideira! Nela mesma, vamos adicionar os pimentões e o prosciutto e cozinhá-los até que os pimentões tenham ficado dourados e o prosciutto crocante, cerca de 5 minutos.

Keeping the same pan over medium heat, add the peppers and prosciutto and cook until the peppers have browned and the prosciutto is crisp, about 5 minutes.


3 - Adicione o alho e cozinhe por mais 1 minuto. Adicione os tomates vinho e as ervas. Usando uma colher de madeira, raspe o fundo da frigideira para captar todos os sabores.

Add the garlic and cook for 1 minute. Add the tomatoes, wine, and herbs. Using a wooden spoon, scrape the browned bits off the bottom of the pan.


4 - Retorne o frango à frigideira e só então adicione o fundo de ave. Assim que a mistura ferver, reduza o fogo e deixe em simmer, tampado até que o frango esteja suficientemente cozido, cerca de 20 a 30 minutos.

Return the chicken to the pan, add the stock, and bring the mixture to a boil. Reduce the heat and simmer, covered, until the chicken is cooked through, about 20 to 30 minutes.


5 - Se for server imediatamente, adicione as alcaparras e o coentro. Mexa para combinar e sirva. Caso contrário, se for fazer com antecedência, refrigere o frango e, quando for servi-lo, aqueça em fogo médio para então adicionar as alcaparras e o coentro

If serving immediately, add the capers and the parsley. Stir to combine and serve. If making ahead of time, transfer the chicken and sauce to a storage container, cool, and refrigerate. The next day, reheat the chicken to a simmer over medium heat. Stir in the capers and the parsley and serve.

Penne com molho de espinafre (Penne with spinach sauce)



Pois é, já tinha visto creme de espinafre, mas molho para comer com massa, não conheci nem na Anhembi... Então, eis uma receita da Giada de Laurentis, uma das chefs do Food Network. Achei bem legal, pois contem queijo de cabra e cream cheese, ingredientes que no Brasil usamos muito pouco e com fins específicos, como saladas e cheesecake. Chatoooo! Vamos fazer massa e esta aqui me parece bastante nutritiva. Eu adoro espinafre e você?

Yeah, i had already seen spinach cream, like joining chicken or something else; however, as a pasta sauce, that's different...easy to make, healthy and delicious. This one i got from Giada de Laurentis, one of my favourite hosts from Food Network. Thought it to be really nice,  because of the goat and cream cheese, ingredients we do not use in Brasil if it isn't salads or cheesecakes. Boringggg! So, let's make this one... Seems very nutritious, doestn't it? I love spinach, what about you?



Ingredientes (Ingredients)

450g de macarrão tipo penne – a receita indica integral, utilize o que desejar
3 dentes de alho
60g de queijo de cabra
30g de cream cheese
180g de folhas de espinafre
2 col. de sopa de queijo parmesão fresco ralado 
Sal e piementa preta em grão moída na hora

1 pound whole wheat or multi grain penne
3 garlic cloves
2 ounces goat cheese
1 ounce reduced fat cream cheese
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
6 ounces fresh baby spinach leaves
2 tablespoons freshly grated Parmesan 



Modo de fazer (Method)


1 - Coloque uma panela grande com água para ferver. Adicione o penne e cozinhe até que fique al dente. Cerca de 12 minutos.

Bring a large pot of salted water to boil. Add the penne and cook until it is tender but still firm to the bite, stirring occasionally, about 12 minutes.


2 - Pulse o alho num processador ou amasse um pilão. Adicione o queijo de cabra, o cream cheese, a pimenta, o sal e metade das folhas de espinafre. A mistura deve ficar homogênea e cremosa. Reserve.

Mince the garlic in a food processor. Add the goat cheese, cream cheese, 3/4 teaspoon of salt, 1/2 teaspoon of pepper, and half of the spinach leaves. Blend until the mixture is smooth and creamy. Set the cheese and spinach mixture aside.


3 - Enquanto isso, coloque a outra metade das folhas no recipiente onde vai servir a massa.

Meanwhile, place the remaining spinach leaves in a large bowl.


4 - Escorra a massa e reserve 1 xícara do líquido de cocção. Despeje a massa quente sobre as folhas de espinafre frescas. Adicione a mistura de queijo e espinafre e mexa, colocando o líquido reservado para ajudar a formar o molho. Corrija o sal e pimenta e finalize com parmesão.

Drain the pasta, reserving 1 cup of the cooking liquid. Spoon the pasta atop the spinach leaves in the bowl. Scrape the cheese and spinach mixture over the pasta mixture and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper. Sprinkle the Parmesan over and serve.

Shortbread cítrico (Citrus shortbreads)




Ingredientes (Ingredients)

3 laranjas clementina ou pequenas tangerinas - substitua por laranjas pêra junto de limão
¾ de xícara de açúcar refinado
3 xícaras de farinha
6 col. sopa de amido de milho (Maisena)
¼ col. chá de sal refinado
340g de manteiga sem sal em T ambiente - 1 Paulista de 200g + ½ + ¼ (2 manteigas então)

3 clementine oranges or small tangerines, washed and dried
3/4 cup sugar
3 cups all-purpose flour
6 tablespoons cornstarch
1/4 teaspoon fine salt
3/4 pound unsalted butter (3 sticks), softened



Modo de fazer (Method)


1 - Pré aqueça o forno a 165 °C. Vamos usar uma fôrma desta tamanho: 25 x 35cm ou 25 x 30cm, a que você tiver em casa. Unte com manteiga, coloque papel manteiga e unte o papel.

Preheat oven to 325 degrees F. Butter a 9 by 12 1/2-inch baking sheet pan, line with parchment paper, and butter the paper.


2 - Agora vamos ralar a casquinha das frutas que usaremos. Tenha cuidado! O ralador não pode pegar a parte branca, ok? Processe as casquinhas com açúcar (1/4 de xíc.) no liquidificador, mexendo pouco a pouco, por cerca de 2 min.

Finely grate the skin (zest) off all 3 clementines, making sure you peel only the orange skin and not the bitter white pith. Puree the zest with 1/4 cup of the sugar in a food processor until minced, about 1 to 2 minutes.


3 - Misture a farinha, a maisena e o sal numa tigela.

Whisk the flour, cornstarch, and salt in a bowl.


4 - Pegue sua batedeira e coloque o batedor chato, aquele reto. Bata a manteiga com o que sobrou do açúcar (1/2 xíc.) em vel. média por 8min. até que fique branquinho e fofo

In a standing mixer fitted with the paddle attachment, cream the butter with the remaining 1/2 cup sugar on medium, until light and fluffy, about 8 minutes.


5 - Adicione agora aquele açúcar com raspinhas que você processou e bata por mais 1min.

Add the clementine-sugar mixture and beat for another minute.


6 - Com a velocidade baixa, adicione aos poucos os ingredients secos (farinha, maisena e sal). Não bata demais! Agora transfira a massa para a fôrma untada com papel. Abra com as mãos o melhor que puder.

While mixing on low speed, add the dry ingredients and mix just until combined. Do not overwork the dough. Transfer dough to prepared pan, spreading it out as evenly as possible.


7 - Agora cobra a massa com papel filme e pressione com as mãos para arrumar a superfície e espessura do shortbread.

Cover with plastic wrap, then press and flatten using your hands over the top to smooth and even out the dough.


8 - Corte em barrinhas de 2,5 x 7cm com uma faca afiada na própria fôrma. Cuidado com o papel!

Cut the dough into bars about 1 by 3 inches with a sharp knife, while still in the pan. Be     careful with the parchment papel.


9 - A decoração da foto, você consegue com um garfo.

Prick a decorative pattern in the shortbreads with a fork or a wooden skewer.


10 - Asse até que fique dourado, por 1h e 10 a 20min. Quando estiver pronto, deixe descansar por 5min. e então corte novamente as barrinhas nas marcas já feitas. Deixe esfriar completamente em racks. Guarde os biscoitos em recipientes muito bem fechados. A durabilidade é de até 2 semanas.

Bake until golden, about 1 hour and 10 to 20 minutes. Let stand for 5 minutes and then re-cut the bars along the previous cuts. Let cool completely on racks. Store the cookies in a sealed container for up to 2 weeks.

Pomodori secchi - Tomate seco - Dried tomatoes





Tomates secos são excelentes a qualquer momento. Com eles, podemos fazer quiches, patês, massas, mousses, terrines e até mesmo comê-los in natura com uma torradinha.

Quando for comprá-los, dê preferência aos tomates mais maduros. Não se deixe levar pelos preços, os tomates que sobram ao fim da feira e até mesmo se estiverem amassados, são ideais para fazer esta conserva.

Se for usar uma assadeira, dê preferência às baixas, de rocambole. Com isso, você pode encher seu forno de tomates. Afinal de contas, não compensa deixar o forno ligado por horas se não for fazer em maior quantidade e estocar. A validade é de 4 a 8 meses. No caso de usar grelhas, os tomates ficarão mais crocantes. Lembre-se, não deixe secar demais ou ficarão duros. O ideal é que fiquem suculentos.



Oven-dried tomates are an excelent choice anytime. Pretty versatile, you can use them on quichs, pâtes, pasta, mousses, terrines and even eat them with little toasts.


When buying, prefer soft cheaper tomatoes, even if they're a little bit ugly. Those are ideal.
Use roll cake trays. That way you can fill the oven with a lot of them. Think about it. It doesn't compensate to make a few 'cause the oven will be working for hours. Besides you can always store, in this case, 4 to 8 months. On the other hand, if you're going to use grills, tomatoes will be crunchy. Just remember not to let them dry to much. The best tomatoes are enoughly dry to preserves but juicy to eat.






Ingredientes (Ingredients)


10kg de tomates italianos bem maduros
Sal - o sal grosso ou até mesmo o sal defumado tambem são muito legais
Açúcar - o açúcar cristal dá resultados muito interessantes, como maior doçura
Pimenta em grão moída na hora - uso um blend da preta, branca e rosa
Peppercorn (pimenta verde em grão) - encontrada nos melhores empórios
Orégano
Alho
Azeite extra virgem para regar
Óleo para encher as conservas

Utensílios: fôrmas de aço inox, quantas couberem no seu forno
                   potes de vidro com tampa


10 kilos (22Lbs) of italian long tomatoes
Sal - you can use barbecue salt
Refined sugar - cristal sugar is even more sweet...castor sugar, why not?
Corn pepper - must be fresh grind - i like to make a blend of black, white and pink
Peppercorn - you can either decorate the jars or drizzle on the tomatoes
Oregano
Fresh garlic - use a mortar
Extra virgin oil to drizzle
Good quality oil to fill the jars

Utensils: aluminium trays and glass jars.




Modo de fazer (Method)

1 - Antes de tudo, vamos lavar os potes que utilizaremos. Eles poderão ser colocados no forno a 150ºC e as tampas fervidas. Só os retiraremos quando estiverem secos. Mais à frente, faremos a pasteurização do produto.

Ok, guys! First of all, we should sterilize our jars. Just put them into the oven at 302F and boil the lids. Take them out of the oven only when they're completely dry. When we end our preserve, shall we pasteurize it too.


2 - Comecemos agora com os tomates. Sabe o topo, que sempre retiramos para o molho? Aqui faremos a mesma coisa, mas retire só o botãozinho...Não me vá decepar o tomate e desperdiçar, hein? Use aquele acessório para retirar o centro da maçã. Funciona muito bem aqui com seus dentinhos.

Now let's begin with the tomatoes. Give priority to italian long, soft  and red ones. You know the top which we always cut off to make sauce, this time it's the same but I want you to cut just the little button. You know what could come on handy, that gadget which takes the apple heart off, specially if it has sharpened teeth.



3 - Depois que você retirou todos os botõezinhos, agora corte o tomate nesse sentido. As pessoas perguntam, qual o sentido do corte...Ora, imagine que você corte o tomate na transversal e não no sentido longitudinal. Uma das metades, será aquela em que o botãozinho foi retirado, ou seja, ficará aberta para o tomate perder todo o suco no forno...e não queremos isso, bambini! Corte longitudinal, ok? No sentido mais longo do pomodori.

All right, once you have taken off all the buttons, cut the tomatoes on the longitudinal lenght. Please, do not cut them on the other way, transversal, unless you wanna it to take longer and half of the tomates to loose the juice to the pan. A total mess!


4 - Com as mãos, retire todas as sementes. Não vale lavar! O tomate ficará ensopado e demorará mais para secar, ok? No caso de produzir uma quantidade como a minha, não desperdice a gelatina do tomate, passe-a numa peneira e congele, faça um flan de tomate, uma gelatina...congele em cubinhos de gelo para seu gaspacho.

Now, many people are tented to use water on this stage, so the tomates get wet and take longer to dry. You must use only your hands to scoop them out. Please, don't throw away the jelly which comes with the seeds. Use a colander and freeze it to ice cubes for gaspacho or make your favorite drink, ok?



5 - Certo! Agora vamos colocar os tomates nas bandejas, bem apertadinhos. Não se preocupe se ficarem próximos demais ou se ficarem tortinhos. Vai funcionar do mesmo jeito. Aliás, a esta altura, seus vidros já estão mais do que esterilizados, retire-os do forno, seque as tampas e lacre-os.

Ok! Now we have to put the tomatoes on the trays. Don't mind if there's not too much space between them. By the way, at this time you should have a look on your bottles, if they are dry and ready to chill. Dry the lids and close the jars.



6 - A hora mais feliz do tomate seco, os temperos. Salpique os tomates com sal e açúcar em quantidades aproximadas. O açúcar cristal é muito interessante aqui. Soque o alho num pilão e salpique-o generosamente por todos os tomates.

Finally we got to the most fun part of the whole process, seasoning. Believe me, you can use anything but mustn't forget salt and sugar. I prefer to put garlic and some oregano, not to mention fresh grind pepper and peppercorn to decorate. All these ingredientes you can put on boys, including the peppercorns.


 
7 - Com o orégano, não se esqueça de friccionar entre as mãos para liberar os óleos essenciais.

With the oregano, remember to frictionate your hands so that'll liberate essencial oils on your preserve.



8 - Por fim, antes de ir ao forno, despeje azeite em fartura.

To finish, be generous when drizzling olive oil on them.

 

9 - Leve ao forno pré aquecido e coloque na temperatura de 150ºC. Lembre-se, nossa temperatura é mais alta pois deixaremos as tampa do forno entreaberta com um pano, algo em torno de 2 a 3cm de distância entre a tampa e a estrutura do forno. Porque fazemos isso? Ora, se a tampa fica fechada, temos que abaixar a temperatura, vai demorar menos tempo, mas o tomate ficará com mais umidade. Ele não vai caramelizar, vai cozinhar em seu próprio suco. E nós queremos caramelização. Se o seu forno tiver ventilador, utilize!

Now put the tomatoes on the oven, temperature mustn't be over 302 F. Bear in mind that we are working on a higher temperature 'cause we won't close the oven. Let it a little bit open using a cotton cloth, at about 1 inch between the door and the oven, ok? But why the hell are we doing that? You see, if we let the door close, the hot vapor and air won't dissipate and that will cook our tomatoes. On the other hand, if you let it open, they loose humidity to air and caramelize, that's what we want. Besides, in case your oven has a fan, use it too! 

 

10 - Agora vá cuidar dos afazeres e esqueça nossos amiguinhos por umas 6 horas. Quero dizer, vá monitorando a cada 2 horas, sempre que possível virando as fôrmas. Ao notar 1 ou 2 tomates escurecidos, não se preocupe pois certas áreas do forno são mais quentes. Só tome medidas se notar odor de queimado. Lembre-se que você não está fazendo bolo. Não há problema do tomate desandar se você abrir para olhar, mas há sim um grande problema se você abrir muito a porta e o calor escapar. Um grande problema e uma grande conta para pagar, não é?

Should't say that, but, now that everything is settled you have enough time to finish other recipes. I mean, they won't be ready before 5 to 6 hours. What else, you can observe every 2 hours, but don't get worried if some of them get darkened. Most of the times, that's caramelization and, you know, many ovens can't equally distribute hot steam. Remember, you can open the oven anytime to change positions between trays. Just avoid opening too much, unless you wanna maximize the time and your bill...lol


 
11 - Após o tempo, os tomates encolhem, enrrugam e ganham um certo tom caramelo nas bordas externas. Retire-os do forno e aguarde um pouco, não há necessidade de aguardar até que esfriem.

You know it's getting ready when they start to shrink and get wrinkled. The red color becomes much more vivid, something like bordeaux. Take them out and leave too chill. There's no need to wait till chilling completely.

 

12 - Por fim, acomode-os um a um e apertados nos potes. Deixe pouco espaço para a gordura. Você pode utilizar óleo, azeite um fazer um blend dos dois. Pessoalmente, prefiro o óleo já que ele é neutro e pega todo o sabor da conserva, ficando maravilhoso em saladas e outros prepraros. Já o azeite, ele se sobrepõe um pouco, rouba o sabor do tomate. Agora leve os vidros cheios para ferver sem que a água chegue na altura da tampa. Essa é a pasteurização. Conserve os vidros bem lacrados, em local escuro e seco.

Put them inside the jars very carefully. They are jewels now and need love. To show you care, leave very little space between them and complete it with good quality oil, like canola. Some people prefer pure olive oil but that's too strong not to mention the final price if you wanna comercialize your product, right? Instead, make a blend or use regular oil, much more neutral and reliable. Now you can pasteurize. Just put the jars on boiling water avoiding to fill the pan till the lids height. Store them on a dark and dry place.

Semifreddo de frutas vermelhas (Mixed berry semifreddo)

Típico da província da Emiglia-Romagna, o Semifreddo (do italiano: meio congelado) é uma sobremesa geralmente à base de zabaglione com chantilly (no caso de se levar as gemas ao banho maria com açúcar) ou um custard com chantilly (no caso de se espessar a mistura de leite e creme de leite com gemas), podendo também ser à base de uma mousse de gelatina com base de creme de leite (no caso de se cozer as frutas com açúcar para misturar ao creme de leite e merengue italiano).

E mais, é apenas uma das categorias do universo dos freddos. Pois nele também estão os sorbets (à base de uma calda concentrada de açúcar) e as granitas (também uma calda com fruta, congelada e raspada com garfo).

O semifreddo ainda pode ser acrescido de licor (sempre em quantidade moderada, pois eles dificultam o congelamento), chocolate derretido, frutas secas ou amendoas torradas, pistaches e coco queimado. Vai do seu gosto e bolso.

Nossa receita de hoje é pedido de minha queria tia Simira. Tirei-a deste site e fiz algumas modificações.

ENGLISH

Tipical from Emiglia-Romagna, Semifreddo (italian: half frozen) is a dessert usually based on a zabaglione with wipped cream (to make zabaglione, you have to cook egg yolks beated with sugar over hot water bath), or a custard with whipped cream (in case you cook milk, cream and egg yolks till the misture cover the back part of your spoon - temperature mustn't raise up the 60ºF). Semifreddo can also be made with sugar syrup mixed with concentrated fruit juice, whipped cream and italian merengue.

Now, bear in mind semifreddo is just a category within the freddos universe. After all, there´s also the sorbets (based on a high concentrated sugar syrup and fruit juice, then taken to refrigerate the same way as the icecream), granites (also with the syrup, but this time taken directly to freeze till become hard as ice. That's when you take a fork and scrape the misture to serve. In Brazil, we have a similar icecream, we call 'Raspadinha').
Semifreddos can also contain liquor (be sure to use moderate quantities or it will hardly freeze), melted chocolate, candied fruit, toasted almonds, pistachios, ginger, coconut, green tea, whatever you wish.

Our recipe today is a request from my lovelly aunt, Simira. I took it from this site and made some modifications.

INGREDIENTES

625g de frutas vermelhas sortidas - framboesas, morangos, blueberries e amoras
1 col. sopa de creme de cassis ou brandy
4 ovos - separar clara das gemas
2 col. sopa cheias de açúcar de confeiteiro
500ml (2 xíc.) de creme de leite fresco
80g de merengues - aquele comprado pronto, ok? Quebre-o em pedaços com as mãos
1 e 1/2 col. de sopa de açúcar cristal
1 col. sopa de maisena




MODO DE FAZER

1 - Corte as frutas em pedaços pequenos e despeje sobre elas o licor de cassis. Deixe descansar por meia hora. Após esse tempo macere as frutas com um pilão ou usando uma concha de sopa.

2 - Bata as gemas e o açúcar de confeiteiro na batedeira até que ficam altas, brancas e fofas

3 - Bata as 4 claras até poder virar o bowl de ponta cabeça e elas não caírem.

4 - As frutas que estavam no cassis, peneire metade delas e adicione às gemas batidas. Use uma colher, você não quer perder volume aqui, né? Nada de fouet!

7 - O próximo ingrediente é o creme de leite batido. Adicione-o em 3 partes, com uso da colher.

8 - Vamos entrar agora com o merengue picado.

9 - Bata as claras em neve e adicione em 3 partes.

10 - Despeje a mistura num container de sorvete e leve ao freezer por 4 horas.

11 - Com a outra metade das frutas vermelhas, vamos fazer uma calda: leve os 250g de frutas vermelhas com líquido e o açúcar cristal ao fogo baixo. Mexa e deixe ferver por 5 minutos.

12 - Misture a maizena com um poquinho de água e adicione esse 'slurry' à calda no fogo. Mexa rapidamente e retire do calor assim que engrossar. Deixe esfriar e gelar.

13 - Passe para a geladeira 1/2 hora antes de servir e distribua em taças com a calda já gelada.



RENDIMENTO: 6 porções

INGREDIENTS

625g mixed berries (such as raspberries, blueberries, strawberries and blackberries)*

1 tbs cassis liquor or brandy

4 eggs, separated

2 tbs icing sugar

500ml (2 cups) cream, whipped

80g bought meringues, crushed

1 1/2 tbs caster sugar

1 tsp arrowroot



METHOD

1 - Cut berries into small pieces and pour creme de cassis over the top. Set aside for half an hour to macerate.

2 - Place egg yolks and icing sugar in a standmixer and beat till light and fluffy

3 - Whisk the cream till fouettée consistence. Do not overbeat till it becomes chantilly. We want it soft, otherwise will be harder to blend into the mixture, and we will loose some air.

4 - Now beat the egg whites avoiding to let it hard too. Add them to the mixture and after that you can put the crushed meringues. Spoon into a freezer-proof container and freeze for 4 hours.

5 - Place remaining berries and liquid in a pan with the caster sugar and heat over low heat, stirring, for 5 minutes.

6 - Combine arrowroot with 1 tablespoon water and add to berries, stirring over low heat until thickened. Set aside to cool.

7 - Half an hour before serving, transfer semifreddo to fridge to soften. Scoop into serving bowls and drizzle with the berry sauce.

Cannoli Siciliani



A palavra Cannoli deriva de 'canna' por causa do formato tubular e também porque no passado, muito antes do uso de tubinhos de metal, eles eram feitos com um pedaço de cana de açúcar. Originalmente, a receita é siciliana. A massa leva Marsala e a ricota do recheio acompanha frutas secas, chocolate, pistache e água de flore de laranjeira.

Obviamente, ao ser exportada, a receita ganhou outros recheios, como o crème patissier, legère e até mesmo chantilly com frutas. No passado, durante as festividades do carnaval siciliano, as pessoas costumavam dar umas às outras, cannolis às dúzias, uma das razões porque hoje os rolinhos de metal também vêm nessa mesma quantia no pacote.



INGREDIENTES


MASSA

2 xic. (280g) de farinha
30g de açúcar refinado
1 col. chá de cacau em pó
1/2 col. chá de sal
30g de gordura vegetal derretida
1 xic. de vinho Marsala

Óleo para untar os rolinhos de metal
1 clara de ovo para colar os cannolis
Óleo para fritura de imersão

Utensílio: rolinhos para cannoli de aço inox com abertura na lateral




RECHEIO

700g de ricota (sem água) - usar um pano
80g de queijo cremoso Président - utilize-o para uma nota ainda mais especial
1 col. chá de vanilina
225g de açúcar de confeiteiro
115g de frutas secas - picadas
80g de pistaches
20g de cerejas em calda para decoração
60g de chocolate meio amargo - picado na faca, mantendo a textura
60g de açúcar de confeiteiro para salpicar


MODO DE FAZER

1 - Num processador com a lâmina de metal, a farinha, o açúcar, o cacau em pó e o sal e bata. Coloque a manteiga e bata. Adicione vinho suficiente até a mistura virar uma massa grudenta. A clara será usada para colar a massa nos tubinhos, ok?

2 - Transfira a massa para uma superfície enfarinhada e adicione farinha até chegar numa textura lisa. Faça uma bola, passe um filme, ponha num prato e deixe descansar por 1h. Transfira a massa para uma superfície ligeiramente enfarinhada, trabalhe-a e deixe descansar por mais 1h. Corte em 3.

3 - Passe os 3 pedaços pela máquina de massa até chegar no nível 5. Mantenha coberto para não ressecar.

4 - Corte em quadrados de 10 x 10cm.

5 - Unte os tubos com óleo, coloque a massa diagonalmente. Não aperte contra o tubo.

6 - Cole as pontas com a clara.

7 - O oleo deve chiar ao jogar uma gota de água. Frite um pouco por vez.

8 - Coloque sobre papel toalha, inclinado para escorrer o óleo.

9 - Remova os tubos de metal enquanto ainda estão quentes. As massas podem ser congeladas ou guardadas em local seco, protegido de calor e umidade.

10 - Recheie momentos antes de servir. Para o recheio, processe a ricota, açúcar e vanilina. Combine as frutas secas, o pistache e o chocolate. Mantenha este recheio na geladeira, ou o chocolate desanda.



11 - Use um saco de confeiteiro e recheie do meio para fora. Passe os dedos para tirar o excesso de recheio,  polvilhe açúcar de confeiteiro e decore com a cereja picada.
