Risoto de figo com alecrim e nozes





Ingredients


6 to 8 cups vegetable broth
1/2 cup walnut pieces
3 tablespoons unsalted butter (or soy margarine or olive oil)
1 teaspoon chopped fresh rosemary
1/4 cup minced shallots
1 1/2 cups risotto rice (Arborio, Carnaroli or Vialone Nano)
1/2 cup dry white wine
1 pound ripe green figs (Calimyrna, Kadota or Adriatic), rinsed, stems removed, and cut into 1/2-inch cubes
1/2 cup coarsely slivered Parmigiano-Reggiano cheese

Directions


Bring the broth to a simmer in a medium saucepan. Maintain at a simmer.

Meanwhile, sprinkle the walnuts in a small skillet and toast over medium-low heat until golden, about 4 minutes.

Add 1 tablespoon of the butter or oil and the rosemary. Stir until the butter is melted and the nuts are well coated. Set aside.

Add the remaining butter or oil to a large saute pan and heat to medium-low. Add the shallots and saute until tender, about 5 minutes.

Add the rice and stir until coated, about 2 minutes.

Add the wine and cook, stirring constantly, over medium-high heat until all liquid is absorbed.

Add 1/2 cup of the warm broth. Cook, stirring constantly, over medium heat until almost all the broth is absorbed. Add the remaining broth 1/2 cup at a time, stirring constantly, until the risotto is creamy and the rice is plump and tender with a slight resistance to the bite, about 20 to 25 minutes. Halfway through the cooking add half of the diced figs.

When the risotto is finished, add the remaining figs, half the walnut and butter mixture and half the cheese (if using). Stir to blend. Salt to taste. Remove from heat and let stand for several minutes before serving.

Yield: 4 (1-cup) servings

Manteiga integral sem sal (3 col. sopa)
Alecrim fresco (1 col. chá)
Echalote (1/4 xíc.) – picar. Pode substituir por cebola pérola
Arroz arbóreo (1 ½ xíc.)
Vinho branco seco (1/2 xíc.)
Figo (400g) – lavar, remover os cabinhos e sortar em cubos de 2cm
Parmigiano Reggiano (1/2 xíc.) – retirar lascas com um descascador de legumes


Modo de fazer


1 – Leve o fundo ao fogo baixo e deixe-o em ponto de simmer

2 – Enquanto isso, leve as nozes ao fogo numa outra panela e toste-as até adquirirem um nota defumada

3 – Adicione às nozes 1 col. sopa da manteiga e o alecrim picado. Mexa até que a manteiga derreta e cubra as nozes por igual. Reserve

4 – Adicione a manteiga restante na mesma panela onde você tostou as nozes. Deixe aquecer e adicione as echalotes picadas. Sauteie por cerca de 5 minutos

5 – O próximo passo é adicionar o arroz e mexer rapidamente até que fique todo coberto pela gordura. Mais 2 minutos

6 – Adicione o vinho e deixe o álcool evaporar

7 – Adicione 1 concha do fundo aquecido. Mexa constantemente, mantendo o fogo médio até que todo o fundo seja absorvido. Vá adicionando mais fundo, 1 concha por vez, até que o arroz esteja cozido e al dente. O processo todo leva em torno de 20 a 25 minutos. Lembre-se de adicionar metade dos figos picados quando estiver nesse intervalo.

8 – Quando o risoto estiver pronto, adicione os figos restantes, metade das nozes com manteiga e metade do queijo. Misture e salgue se necessário. Remova do fogo e deixe descansar por alguns minutos.


Rendimento: 4 porções (1 xíc. cada)
